Here is the progress on our our bedroom...


This picture was a wedding gift from our friend Matt, it was a picture taken of the church where Luke proposed.








and on a random note, but an important one... on sale, is fresh market antibiotic free chicken... only 2.99/lb until next Wednesday!! I stocked up!


Easy Spinach Tortellini

Tonight I just wanted something quick, easy and healthy for dinner, so here is what I came up with... 
First make this...



Then wilt some fresh spinach in 2t olive oil and some minced garlic (I added some salt and pepper too) on medium high heat...


mix in with tortellini and sprinkle with a little parmesan cheese....




Enjoy.

Tonight Luke and I went to a Valentine Dinner that our church's youth group hosted. It was so cute! We managed to take a quick shot before we left home.

My Mom's Chicken Tortilla Soup

YUM... this soup is truly DELICIOUS and HEALTHY and EASY. Try it TONIGHT!


Here is what you will need...
1 Large Chicken Breast (2 halves)
1/2 t Olive Oil
1 cup Chopped Onion
Juice of 1/2 Lime
1 Clove of garlic (minced)
1/2 t Chili powder
1/4 t Cumin
2 Cans chicken broth (I use low sodium)
1 cup Chunky Salsa
1 Small can of corn (drained) (I used no sugar added)
1 Can chopped green chilies


Here is what you do....
1.Chop up chicken into small (stir fry size) pieces and cook in olive oil on med-high heat for about 2 minutes until no longer pink.
2. Add onion, lime juice, garlic, chili powder, cumin and cook, stirring occasionally, about 2 more minutes. 
3. Stir in broth, salsa, corn and chilies. Cover and bring to a simmer. Simmer 15-20 minutes. 


You can serve with shredded monterey jack cheese, chopped avocado and crisp tortilla chips on to top of soup. 


For weight watchers, this soup is 5 points with a little cheese and baked tostada crunchies. :) 
Oh and weight loss update: Lost 1.0 last week, total 5.2 lbs!

Healthy Treats

I have had so many sweet people ask what I am eating on my weight watchers plan. By the way 4.2 lbs lost in my four weeks (thats 1lb a week) but NO loss in the past 2 weeks, but no gain either. I feel great though and know my hard work will hopefully catch up on my weigh-in this week! It also feels great to be eating healthy. 
Here are some yummy treats I had today...
 Okay this is a sugar free chocolate pudding (2pts) and when you eat it with strawberries it totally gives the effect of chocolate covered strawberries! If you take a sugar free vanilla pudding and pair it with strawberries it mimics strawberry shortcake. YUM
Next is a blueberry banana smoothie and in weight watcher language it is ONE point! These are delish! This is what you will need....


 1/2 cup of blueberries
 1/2 cup yogurt... I like this flavor
One banana
and also.... 4 ice cubes and 1/4 c water.
Blend them together.....
and enjoy!

Winter walk

Luke and I decided to go on a (what seemed to be a good idea at the time) walk. It was FREEZING and we locked ourselves out of our condo! Whoo hoo! We had a great time though and I had fun playing with my camera! Here is what we saw...













We are getting an Ice storm tonight! Burrrrrrr. Stay warm and cozy, spring will be here soon!
