Chicken Fajita Casserole

My friend Erin, who is also a momma of twins brought me several meals while pregnant and with new babies. It was SUCH a blessing to get such delicious meals and one of them she made, I requested the recipe for... little did I know that when she told me it was a Weelicious meal, I would later be cooking up a storm all from this website. The concept is healthy (well all aren't healthy, but all ARE made from scratch) and quick, easy and delicious meals that your whole family will love. They have baby food recipes all the way up to family recipes. Obviously, Luke and I are the only ones eating solid foods around here and I tell you EVERY recipe on this site is DELISH! I will be posting lots of recipes that we are trying here on my blog from weelicious, and this Potluck Chicken Fajita Casserole recipe is one of them...

This is what you will need:


  • 1 tablespoon vegetable or canola oil
  • 1 medium yellow onion, diced
  • 3 bell peppers (red, yellow, orange or green), sliced
  • 1 16-ounce bag tortilla chips
  • 1 1/2 cups grated cheddar cheese
  • 2 12-ounce jars salsa verde or tomatillo salsa
  • 3/4 cup sour cream (low fat or regular)
  • 4 cups cooked chicken, shredded



You basically layer the following 5 layers in this order into a 9x13 casserole dish....

Layer One:

Yes, Tortilla chips... This will be your first layer. 

Layer two:


Onion/pepper mixture. You will heat the oil in a skillet and add sauté onions and peppers in the oil for about 5-6 minutes or until the just become soft.

Layer three:


Your shredded chicken. (I just shredded boiled chicken and added salt and pepper)

Layer four:


Shredded cheese

Layer five:



 Your salsa mixture. Mix the salsa verde and the sour cream in a large bowl and add as your fifth layer. 

So... You layer each layer twice and top with more cheese....


Cover with aluminum foil and bake at 350 degrees for 20 mins, then bake uncovered for 20 more minutes or until cheese is golden....


The chips soak up the salsa mixture and some stay crisp! It's a cross between a fajita and nachos.

5 Weeks

This week I feel like my babies have morphed from newborns into babies! Especially my Hadley girl! Oh my goodness, how time is flying. We have a doctor's appointment on Monday and we can't wait to see how much they weigh and how they are growing! This week was a great week. Here are some highlights...









 Took the babies to their first "football" game. 


I took them to target by myself (and yes, I could only get a few things to fit in the cart...taking newborn twins to a grocery is not easy)





On my Mom's side of the family we call each other Moose (I'll have to explain on another post) and sweet Jack Henry loves to make moose ears:)

And just soaked in family time :)

I need to be better at taking more pictures this week and I feel bad for Jack Henry as I see Hadley is in many more pictures this week, not intentional, promise. I started back with cooking this week too! I will be posting MANY recipes coming soon. Also, I plan to do a lot more blogging this week, I do all my blogging on Luke's computer and so often he is working, and I don't get a chance. But tomorrow I plan on writing part 3 of the birth story and getting more posts posted. Thanks for being patient. Just soaking up these two and enjoying every moment!

One month!

I can't believe that my babies are one month old! It is true what everyone says about time flying by. I have been so blessed to soak up each day with these sweet ones and I am just trying to absorb each and every moment! They have changed so much already in these four weeks and have grown so much. They have a doctors appointment on 9/17, so I will have a better gage as far as their weight goes.
I fall in love with them more and more each day which doesn't seem possible and just can't believe how much Luke and I could love two littles! My heart is overwhelmed with joy and we give glory to the Lord for our sweet family of four.



























The babies are on a fabulous 3 hour schedule and are just sweet angels! They go 4-5 hours between their night feeding and I would definitely say that with twins, you should keep your babies on the SAME schedule :) 
I also have been exclusively breast feeding these little twinks and that is going so very well... I will have to do a whole post on this one!
We also went to a friend's wedding on Friday night, our first little night away from the babies. We missed them while we were out but it was nice to have a little date night!
