11 Weeks...

11 weeks and we have... babies who sleep through the night!!!! Our sweet babies are sleeping through the night now, 10-7, 9-6, 10:30-8 have been our last three nights! We are so thankful for such angels! I have doctor appointment details and a Louisville trip to blog about next but for now, here are some pictures I took during their eleventh week (excuse Hadley' slobbered onesie)...

If you are looking for a really delicious and really easy recipe, I have one for you... and let me tell you it is amazing. Lentil soup may freak you out but trust me, my husband even loves it! It is an Alton Brown recipe and it is a part of our meal rotation. Here is what you'll need...

  • 2 tablespoons olive oil
  • 1 cup finely chopped onion
  • 1/2 cup finely chopped carrot
  • 1/2 cup finely chopped celery
  • 2 teaspoons kosher salt
  • 1 pound lentils, picked and rinsed
  • 1 cup peeled and chopped tomatoes
  • 2 quarts chicken or vegetable broth (I usually use vegetable)
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground toasted cumin
  • 1/2 teaspoon white pepper

First chop up the carrot, onion and celery and add to the olive oil in a Dutch oven over medium heat. You will cook these for about 6-7 minutes or until the onions are translucent. 


Next, add all of the other ingredients (tomatoes, lentils, broth and spices... 




I have used vegetable and chicken broth before, and both are delish. 


And bring just to a boil, then cover and simmer on low heat until lintels are tender, it takes me 45 minutes. Lastly, using a stick blender ( I don't have one, I just take a masher and start mashing) and puree until your preferred consistency. 


Serve immediately and enjoy this HEALTHY, DELICIOUS, PERFECTLY FALL meal.

It is like having a dietician on speed dial :)  It is an app you can download on your phone that allows you to scan grocery items while you are grocery shopping and it gives each item a letter grade based on its overall healthiness. It takes into account nutrients, ingredients, processing, and fortification. A lot of items I thought were not so bad, scored poorly and some items I thought were bad, scored much higher than expected. You can go to www.fooducate.com  and play around on their site. You can search products and read up on tons of nutritional information. I really think this makes buying healthy groceries much easier and hope you will go check it out and download the free app!
