Chicken Arugula Pizza

Sorry for the lack of blogging... I have been intending to make my new post a Pumpkin Patch Post for the last two weeks, but every time my husband and I have time to go, it rains. So hopefully a pumpkin patch post will be in the very near future. So in the mean time, here is an amazing Dr.Oz recipe...

You will need...

8 oz refrigerated whole wheat pizza dough
1/2 cup chopped tomato
Marinara to taste
4 oz cooked chicken breast, cut into strips
1/2 cup low fat mozzarella
1 1/2 cups arugula
2 tbsp parmesan

1. Preheat oven to 450 degrees.

2. Take a whole wheat pizza crust and roll into a 12 inch circle on a floured surface and then bake for 7-10 mins on a rimless pan or pizza stone. I used this...

3. Remove crust from oven and flip over. Spread some store bought marinara sauce and tomatos evenly on top. Scatter chicken pieces over sauce and sprinkle with the mozzarella. Return to the oven to bake another 7-10 minutes until cheese is melted and pizza is crispy and brown.

and sprinkle with this...

Enjoy!
