My Mom's Chicken Tortilla Soup

YUM... this soup is truly DELICIOUS and HEALTHY and EASY. Try it TONIGHT!


Here is what you will need...
1 Large Chicken Breast (2 halves)
1/2 t Olive Oil
1 cup Chopped Onion
Juice of 1/2 Lime
1 Clove of garlic (minced)
1/2 t Chili powder
1/4 t Cumin
2 Cans chicken broth (I use low sodium)
1 cup Chunky Salsa
1 Small can of corn (drained) (I used no sugar added)
1 Can chopped green chilies


Here is what you do....
1.Chop up chicken into small (stir fry size) pieces and cook in olive oil on med-high heat for about 2 minutes until no longer pink.
2. Add onion, lime juice, garlic, chili powder, cumin and cook, stirring occasionally, about 2 more minutes. 
3. Stir in broth, salsa, corn and chilies. Cover and bring to a simmer. Simmer 15-20 minutes. 


You can serve with shredded monterey jack cheese, chopped avocado and crisp tortilla chips on to top of soup. 


For weight watchers, this soup is 5 points with a little cheese and baked tostada crunchies. :) 
Oh and weight loss update: Lost 1.0 last week, total 5.2 lbs!
